Everyone needs a little pick me up. This fruit smoothie is a favorite substitute for my standard french vanilla coffee or ice latte. If you are like me and forget about the fruit you bought and see that your bananas are a bit mushy and your strawberries are about to be chucked, throw it in the blender instead. I am not advocating eating rotten fruit, clearly this recipe would be ideal with freshies but I also try to waste as little food as possible.
Fruit Smoothie
Serves: 1
1/2 cup plain yogurt
1/2 cup pomegranate juice
1 banana, peeled
6 strawberries, stems removed and halved
handful of blueberries
1 splenda packet
5 ice cubes
- Throw all ingredients in a blender, blend on low until ice cubes are crushed and all ingredients are mixed thoroughly. May take a couple minutes.
Cooking Notes:
- You can substitute the fruit for whatever you have on hand.
- If you don’t have pomegranate juice, you can substitute with orange juice.
- For 2 people, simply double all ingredients with the exception of banana and ice cubes. For the ice cubes add a couple extra but don’t double.
- A standard blender should hold enough ingredients to accommodate 2 servings.
