As promised here are the recipes I prepared for our Valentine’s Day Brunch.  If you are looking for some ideas and tips to make your brunch a success, be sure to read my previous post.

Herb Baked Eggs
Serves: 2

2 eggs
4 T. whipping cream
2 pats of butter
1/2 tsp. garlic, finely minced
1/2 tsp. thyme, finely minced
1/2 tsp. rosemary, finely minced
1/2 tsp. parsley, finely minced
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. parmesan cheese, grated

  1. Pre-heat broiler for 5 minutes.
  2. Carefully break each egg in separate bowls, keeping egg intact. 
  3. Using small gratin dishes, pour 2 T. of whipping cream in each dish.
  4. Place a pat of butter in each dish.
  5. Using a cookie sheet, lay dishes in middle of sheet and broil for 3 minutes.
  6. Remove from oven and carefully pour 1 egg in each dish.
  7. Top each egg with a 1/4 tsp. of the following:  minced garlic, thyme, rosemary, parsley, salt and pepper.
  8. Grate 1/4 tsp. of parmesan cheese on top of each egg.
  9. Broil for 4 minutes.*

*Eggs should be cooked, if your eggs are not cooked thoroughly, rotate your cookie sheet and broil until cooked.

Cooking Notes:

  • To assist with cooking the eggs evenly, start with room temperature eggs.
  • Each broiler will cook differently, watch this dish closely.  The first time you broil, the cream should start to brown slightly and the second time you broil, the eggs should be completely cooked.
  • If you do not have mini gratin dishes, you can use ramekins instead.  If using ramekins, reduce the amount of whipping cream by half.  Since ramekins are not as wide, your cooking time will be increased.

Sourdough Toast  with Peach Conserve
Serves: 2

Sourdough bread, sliced
Peach conserve

  1. Toast sourdough bread.
  2. Using a heart shaped cookie cutter, cut hearts out of the center of each slice.
  3. Serve with butter and peach conserve

Canadian Bacon
Serves: 2

Canadian bacon

  1. Using a frying pan, brown each side for a couple minutes.

Fruit Salad
Serves: 2

Strawberries, halved
Green grapes
Pineapple chunks
Melon, cubed

  1. Gently mix fruit together.

Mimosas
Serves: 2

1 bottle of champagne
Orange juice

  1. Pour equal parts champagne and orange juice.
